Happy Valentines Day!
Today we thought we would share our favorite cookie recipe with you so you can make them for your favorite people 🙂 Valentines is all about spreading the love and what better way than to do that with chocolate and peanut butter? Based on a Lorraine Pascale recipe, these are easy to make and super addictive. You will be everyones best friend when you bring these out!
You will need:
130g butter (room temp)
200g soft light brown sugar
1 egg (room temp)
a few drops of vanilla essence
200g plain flour
1/2 tsp baking powder
1/2 tsp bicarbonate soda
150g peanut butter
100g broken chocolate or kisses…
Preheat the oven to 170 degrees celsius.
Cream together the butter and sugar until fluffy then add egg and vanilla.
Mix well then stir in the flour, baking powder and bicarbonate soda.
Gently stir in peanut butter and chocolate. For best cookie texture, stir peanut butter as little as possible. Get your hands in and get messy if that’s easier!
Divide into 14 equal balls and place on baking tray before flattening slightly. These do spread out a lot so make sure you leave plenty of space around them.
Bake for 12-15 minutes until they start going brown.
When you take them out of the oven they will be REALLY squidgy. Leave them on the tray until they are completely cool and firm…
Then get the kettle on and share with your loved ones!
We hope you have a cracking day however you spend it..
